quinoa salad tacos

Ingredients

  • 1 cup NorQuin Quinoa
  • Grilled Pine View Farms Chicken chopped (3 Chicken breasts or 4 chicken tights)
  • 1 Celery stalk
  • 1/2 Red bell pepper, chopped
  • 1/2 Yellow bel pepper, chopped
  • 1/4 cup chopped Floating Gardens parsley
  • 1/4 cup edamame

Dressing:

  • 4 Tbsp¬†Three Farmers Camelina oil
  • 2 Tbsp Gravelbourg French Mustard
  • 2 Tbsp rice vinegar
  • 2 Tbsp ponzu sauce
  • 1/2 Tbsp peanut butter
  • 1 Tbsp lime juice
  • 1/4 tsp garlic powder
  • 1/4 tsp sea salt
  • 1/4 tsp pepper

Directions

Quinoa salad tacos (chicken)

  1. Cook the quinoa according to the instrutctions on the box.
  2. Toss the chicken (already grilled), quinoa and other incredients with the Dressing.
  3. Serve chilled room temperature.

Dressing

  1. Combine all the ingredients, mix them well.
  2. Adjust the seasoning to taste if desire.
