Strip-peel the eggplant (with a peeler alternate: peeling one strip leaving a strip). Cut eggplant into cubes. Drizzle oil onto cubes, season with pepper. Place cubes onto a parchment paper and bake at 525F for 20 minutes- until browned. Remove from the oven and sprinkle with the sea salt. Let cool. Drizzle lime juice onto eggplant, stir together. Crumble the feta cheese onto the eggplant, stir. Top with fresh mint.
