To make pizza dough, in a small measuring jug or bowl, dissolve raw honey, organic coconut oil, and yeast in warm water and leave to sit 5-10 minutes until frothy.
Meanwhile, in a large bowl, combine flours, salt, and oregano. Make a well in the flour mixture, and pour in water, coconut oil, yeast, and honey mix. Stir well then combine with hands to make a ball of dough.
Turn out on to floured board and knead until smooth, adding extra all-purpose flour as necessary if dough is too sticky.
Lightly grease large bowl with coconut oil; place dough in bowl, then cover bowl with damp dish towel or plastic wrap. Leave in warm place for an hour or until dough has doubled in size.
Prepare sauce while dough rests. In medium bowl, combine dill with cream cheese. Set aside.
Preheat oven to 400ºF.
Grease large baking tray with coconut oil, pat down dough into round disk, around 1 inch thick. Bake for 15 min, until very pale golden colour, then remove from oven. Lower oven temp to 375ºF.
Remove crust from oven, spoon cream cheese and dill sauce on top, and spread to cover entire surface. The sauce will become smooth from the heat of the crust.
Lay sliced cured meat all over the sauce layer, then sprinkle with fresh spinach. Crumble blue cheese on top, then add a layer of mozzarella. Return to oven for 20-30 min. When pizza is almost done baking, slowly warm 4-5 tablespoons of raw honey, until just liquid enough to drizzle. Remove pizza from oven and drizzle honey over entire surface.
