The Canadian Birch Company

We are a proudly Canadian company bringing you distinct flavours from the land we live on. As a company and as individuals, we are dedicated to the art of making gourmet birch syrup.

Our birch estate above the shores of Lake Winnipeg’s south basin in Manitoba, Canada, is home to some of the world’s most pristine birch forests. Just as the Scottish Highlands produce the world’s greatest whiskies and France’s Champagne region is the only source for true Champagne, these trees produce the finest birch sap and syrup in the world. Ideal soil conditions – the result of glacial retreat in the last Ice Age – allow our trees to flourish and produce clear, pure sap.

Our source is one reason for the distinct, rich flavours of our syrups that set them apart from others. The depth of flavour and the fruitiness and finish of our syrups is second to none. From our forest to your kitchen, we are committed to bringing you the gold standard of birch syrup.

Pioneering new traditions

We entered our 2012 Amber Syrup into the 2013 Great Manitoba Food Fight and came away with a bronze medal and recognition that our product offered a unique flavour not found in other birch syrups. This success has spurred us to continue honing our craft, and to expand our product range to demonstrate the full potential of birch sap and syrup.

As innovators aiming to develop new traditions that respect the natural origins of our product, we recognise that new techniques and technologies can enhance birch syrup and take it to a new level on the world’s culinary stage.

Our quest to create a premium birch syrup started in 2006 and since then we haven’t stopped working to improve our methods. We have learned from trial and error and have invested in state-of-the-art technology to complement our evolving production processes.

We aim to minimise our impact on the environment, and have adjusted our processes to ensure they are ecologically sustainable. This includes investing in energy efficient fuel sources such as wood pellets and reusing water from our production processes to minimise waste. The Canadian Birch Company does not use any fertilisers or pesticides, and has adopted minimally invasive tapping and collection processes that help to maintain a vibrant and diverse understory in the forest.

We hire locally, and use local services, whenever possible. We believe in creating a long lasting, environmentally and socially sustainable industry in our home community.

Birch syrup

The making and use of birch syrup can be traced back hundreds of years to Canada’s First Nations people, but larger-scale production and its use as a gourmet culinary product are relatively new developments. This is in part due to the difficulties of birch syrup production, including the high volume of sap required to produce syrup – an average of 120:1 versus 40:1 for maple syrup.

While the process is an arduous one, requiring precision, expertise and intuition, we relish the challenge and the opportunity to bring the unique flavour of birch syrup to tables across Canada and around the world.

Beyond its rich flavour, birch syrup is also nutrient-rich, with high concentrations of calcium and antioxidants. The Canadian Birch Company syrup has a particularly high nutrient content due to the rich soil and excellent growing conditions found on the shores of Lake Winnipeg, North America’s sixth-largest lake.
